Spicy Penne & Smoked Trout
100g wholegrain penne pasta
1 leek, sliced
2 garlic cloves, chopped
½ red chilli pepper, chopped
1 tomato, chopped
100ml crème fraîche
150g smoked trout
Cook the penne as per the instructions on the pack.
Fry the leek with the garlic, chilli and tomato. Stir in the crème fraîche and heat through.
Pour the sauce over the penne and garnish with the smoked trout. Sprinkle pumpkin seeds on top.
