DIY Nut Milk

This is so delicious and easy. You can use this recipe with either almonds, cashews or hazelnuts to make a gorgeous substitute for cow’s milk. Store bought nut milks are notorious for all their nasty stabilisers and thickeners and I’m guilty myself of buying them for convenience, but there really is nothing better than homemade- in terms of health and taste! I like to use mine for porridge and I love to heat it with a bit of cinnamon as an alternative to hot chocolate!

Makes 750ml-1 Litre



Ingredients:

1 Cup of Nuts, Soaked Overnight
1 Litre of Water
Optional for Sweetness: 8-10 Dates
Optional Flavours: Cinnamon, Vanilla etc
You need: Cheesecloth!

Step 1: Soak your nuts in the fridge overnight. If you’re sweetening your milk, add your dates to a bowl and cover them in hot water for a few minutes.

Step 2:?Drain the nuts and add them to your blender with 1 litre of fresh water. Blitz on high for about 30 seconds until the nuts are broken down.

Step 3: If you’re sweetening/flavouring, drain the dates and add them to the blender with your spices. Blitz on high again (if adding dates, blitz for a little longer to make sure they’re evenly processed).

Step 4:?Cover the top of a jug or bowl with your cheesecloth. I like to wet mine first and then wrap it tightly around the sides of the jug so that it doesn’t slip. Pour the mixture slowly over the cheesecloth until all the liquid has run through. Discard all the mushy nuts or use them for something else. What’s left in you bowl/jug is your delicious nut milk!This recipe is Gluten Free, Dairy Free, Vegan & Paleo and will keep in your fridge for 2-3 days in a sealed jug.
