The new issue of Image Interiors & Living is out today (Fancy a sneak peek? Click here!) and, in celebration of it being back-to-school season, we’ve taken on the packed lunch. There are cute lunch accessories aplenty, but no soggy sambos in sight. Instead, food stylist Jette Virdi has created some seriously tasty, healthy and easy lunch recipes, as well as delicious treats to go with them.

Peanut butter seed bars
YOU WILL NEED
* 2 large spoonfuls peanut butter * 2 ripe bananas (the riper, the better!)
* 125g oats * 50g desiccated coconut * 70g sunflower seeds * 50g walnuts, chopped * 30g cranberries * 25g pumpkin seeds
1 Preheat oven to 180C. 2 In a saucepan, heat up the peanut butter and mash the bananas into it. Make sure it is all incorporated. 3 In a large bowl, mix all the remaining ingredients, bar the pumpkin seeds. 4 Combine this with the wet mixture and press down into a lined tin.5 Scatter over the pumpkin seeds and cook in the oven for about 20 minutes or until the edges turn golden. 6 Leave to cool and then cut into bars. Store in an airtight container for a week.
