Spicy Prawn And Chorizo Lollipops
This is the perfect light treat for the midweek slump. Packed full of flavour and earthy spices, these prawn and chorizo lollipops by A Fox In The Kitchen will give you the perfect kick to get you through the week.
16 raw tiger prawns, peeled
16 slices of chorizo
1 clove of garlic
2 red chillis, deseeded and chopped
60ml lime juice
60ml olive oil
1 tbsp honey
1 tsp smoked paprika
¼ tsp cayenne pepper
salt & pepper
lime to serve
1 To make the spicy smoked sauce, place everything except for the prawns and chorizo into a small food processor and blitz until you have a smooth paste. Halve the sauce and set one portion to the side.
2 Preheat a griddle pan, or BBQ if using, over a high heat. Wrap each prawn around a slice of chorizo and thread onto the skewer, do this twice for each skewer. Brush with the spicy smoked sauce and cook for about 3 minutes or until the prawns are cooked through.
3 Serve with some lime wedges and the extra portion of spicy smoked sauce for people to dip.
