In the new issue of Image Interiors & Living, we visited Dublin’s hip new eaterie Eating House at The Woollen Mills and took in gorgeous Ha’Penny Bridge views while sipping one of these delicious gin, nettle and thyme cocktails. The issue features an interview with owner Elaine Murphy, as well as a summer-tastic Whiskey Raspberry Sour recipe but we couldn’t resist begging their booze specialist Sean Garango for this thyme-tastic tipple. “It’s our take on the classic American Tom Collins but with a craft twist,” Sean explains. “We make our own nettle and thyme syrup – our recipe is a secret! But you can make your own version with nettle tea, thyme and a basic sugar syrup.”
35ml nettle syrup
35 ml freshly squeezed lemon juice
Soda water to top up
Mix the gin, syrup and lemon juice. Shake over ice. Top up with soda, a lemon wedge and a sprig of thyme. Enjoy!
