Weekend Recipe: BBQ Beef Kebabs with Plum Sauce

If you are ready to start experimenting in the kitchen, Si?cra’s x Catherine Fulvio’s BBQ Beef Kebabs with Plum Sauce is the perfect recipe to whip up this summer. This savoury recipe combined with a subtly sweet plum sauce is a crowd-pleasing dish which will leave your guests wanting more.

Makes approx. 6 medium size kebabs.

Ingredients

For the plum sauce

  • 1 garlic clove, finely chopped
  • 8 plums, pitted and diced
  • 60g Si?cra Light Golden Brown Sugar
  • 4 tbsp. orange juice
  • 2 tbsp. soy sauce

For the glaze

  • 1 garlic clove, finely chopped
  • ? red chilli, finely chopped
  • ? lemongrass stalk, finely chopped
  • 70g Si?cra Rich Dark Sugar
  • 60ml rapeseed oil
  • 50ml orange juice
  • ? tsp ground cumin
  • Salt and freshly ground black pepper
  • 300g sirloin beef, cut into strips
  • 12 cherry tomatoes
  • 12 small bay leaves
  • Coriander leaves, to garnish

Extras

  • 6 wooden skewers
  • Coriander leaves, to garnish

Method

  1. Start off by soaking the wooden skewers in water for at least 2 hours before using them to prevent them from burning on the BBQ.

?To make the sauce

  1. Heat a saucepan with a little oil and add the garlic, cook for about 50 seconds before adding the plums, light golden brown sugar and orange juice.
  2. Continue to simmer for a further 5 minutes and add the soy sauce.
  3. Simmer for 7 to 8 minutes until the sauce has thickened and the plums are completely cooked.
  4. Check the seasoning by adding a little more soy sauce if needed and pepper if needed.? Set the sauce aside.?

To prepare the glaze

  1. Heat all the ingredients to a saucepan and leave to simmer for about 2 minutes, stirring from time to time.

To BBQ the skewers

  1. Thread the sirloin strips, cherry tomatoes and bay leaves alternately on the skewers.
  2. Brush the skewers with oil and place on indirect heat on the BBQ.
  3. Chargrill for about 2 minutes each side before brushing on the glaze and continue to grill, turning once.? Keep brushing on the glaze.
  4. The skewers will take about 3 to 4 minutes on each side in total to cook.

To serve

Arrange the skewers on a large platter and spoon over some of the plum sauce, sprinkle over the coriander leaves and serve the rest of the sauce in a jar on the side.
