Watermelon and Halloumi Salad with Mint

Could this be the perfect spring salad? We certainly think so! Team with some rhubarb cordial or a delish gin and nettle cocktail.

Watermelon and Halloumi Salad with Mint

Serves 4

YOU’LL NEED

For the salad

2 x 250g packets of halloumi, sliced 1 cm thick

1 tbsp olive oil for brushing

1 small watermelon, cut into large chunks

Large handful of mint leaves

For the dressing

4 tbsp olive oil

1 tbsp honey

1 tbsp pomegranate molasses

Juice of half a lemon

Sea salt

METHOD

To make the dressing, simply shake all of the ingredients together in a jar until fully combined, taste, season with a little sea salt and set aside.

Brush the halloumi slices with a little olive oil and then grill or griddle them for a few minutes on each side until golden and tender. Place on some kitchen paper to remove any excess oil.

Arrange the watermelon chunks and halloumi slices on a large platter. Scatter over the mint leaves. Shake the dressing up again and spoon all over the salad and it is ready to serve.
