Recipe from Liam Davy, Hawksmoor Head of Bars
The New Cork Sour is a very close cousin of the New York Sour (a kind of bourbon sour with a red wine float). We loved the idea of a slightly fruity whiskey sour but found the original a little hard to drink with its sweet, spicy American whiskey and the tannic red wine that sat on top.
For our version, we decided to use the lighter, smoother style of Irish Whiskey found in Powers Gold (a wonderful whiskey to mix with) and instead of just popping straight-up wine on there we decided to use a really light fruity style (the low tannin Gamay) and add some cherry flavour to give it a more appealing overall taste. A splash of tangy lemon sherbet and slightly funky raspberry vinegar add a real depth to the cocktail.
