Ready for the weekend: 3 easy summer cocktails to make at home

Impress guests or just treat yourself to a summery drink with these three cocktail recipes, all easy to make yourself.

Even if we haven’t had the most summery weather in the last few weeks, there’s nothing better than enjoying a wonderfully seasonal cocktail, full of fruity flavours.

And while you may think these kinds of drinks are best left to the bartenders, there are actually plenty of cocktails that are both delicious and simple to make yourself.

Irish mixed drinks company Poachers’ drinks are made and bottled in County Wexford, and contain Irish ingredients such as Achill sea salt and Irish-grown mint. They have shared three of their favourite summer cocktails that are easy to make at home.

Best of all, there’s no fancy equipment required. For each one, simply add all the ingredients to a glass, and then top with your tonic or soda.

Poachers Sunshine Smash

25ml Whiskey
30ml Apple Juice
5 Basil Leaves
4 Raspberries
Top with Poachers Lemon Soda with Irish Mint
Garnish with a Basil Leaf

Poachers Wild Spritz

25ml Aperol
15ml Limoncello
2 dashes of Orange Bitters
6 Mint Leaves
Top with Poachers Wild Tonic with Irish Elderflower
Garnish with an Edible Flower

Poachers Irish Paloma

30ml Poitin
10ml Lime Juice
5ml Vanilla Syrup
Top with Poachers Grapefruit Soda with Irish Sea Salt
Garnish with a slice of Charred Grapefruit
