Packed with flavour, fruit and fibre, these delicious overnight oats are the perfect way to kickstart your day, says executive chef Gareth Mullins.

These Bircher Muesli Overnight Oats are a delicious way to start your morning. We make them every day for our guests in the hotel, and we always get excellent feedback.  I get to taste them to make sure they’re up to standard – perks of the job!

At this time of year, I always add our wonderful Irish berries, and in winter I like to add poached pears or more dried fruits like apricots, figs and dates. Feel free to play with the recipe by adding different fruits and some cinnamon.

The oats are packed full of good, slow-release carbs and will keep you full all day. Simply get it ready the night before and you’re good to go.

Ingredients
  • 1 cup rolled oats
  • 1 1/2 cups coconut milk
  • 2 tablespoons natural yoghurt
  • 1 tablespoon chia seeds
  • 1 apple
  • 10 strawberries, cut into quarters
  • 15 blueberries
  • 1 orange, cut into segments
  • splash of honey, optional

 

Method

Add all the ingredients together and split into containers. Leave for one hour or overnight, and voila! You have a tasty, nutritious breakfast to eat at home or bring on the go.
