An unbeatably energy-boosting bar to perk up your day. You’re welcome…

Roasted nectarine slice

Makes 8 bars.

YOU WILL NEED
? 12 nectarines, halved and seeds removed
? 1 tsp vanilla essence
? 300g flour
? 100g ground almonds for the pastry, plus 50g extra for the oaty almond dough
? 200g butter, cubed
? 1tbsp sugar
? 50g oats

METHOD
1 Preheat oven to 180 ?C/Gas Mark 4.
2 In a bowl, toss the halved nectarines with the vanilla essence, then place on a lined baking tray and roast in’the oven until soft and slightly caramelised.
3 Meanwhile, in a food processor, blitz?the flour, 100g almonds, butter and’sugar together until the mixture forms breadcrumbs.
4 Add a spoonful of water at a time until a dough is formed.
5 Take three quarters of this and press down into a lined baking tin roughly 15 x 9cm.
6 Cook for 20 minutes or until golden at the edges.
7 Meanwhile, the nectarines have cooked, so with a fork, mush them together. If there is a lot of liquid, pop into a pan and cook on a medium heat until reduced and a thicker consistency.
8 With the remaining dough, add the oats and 50g ground almonds.?Mix together with your hands until big breadcrumbs are formed.
9 Remove the pastry from the oven and spread with the nectarine mix.
10 Crumble the oaty almond dough and pop back into the oven for a further 20 minutes until golden on top.
11 Leave to cool and then slice up.
